Sweet Potato Soufflé
  1. Combine whipped cream, brown sugar and salt in a sauce pan over medium heat, stir until well combined

  2. Pour over mashed sweet potatoes, and beat at low speed

  3. Beat 6 egg yolks, spices and chopped pecans at low speed

  4. Separately beat 6 egg whites at room temp, until stiff peaks

  5. Fold egg whites into potato mixture carefully, and place into greased 2 quart casserole container, set aside

  6. Separately combine butter, whipped cream, brown sugar and melt under low heat

  7. Add in chopped pecans, flour and rum extract

  8. Once mixed, pour over the potato mixture

  9. Place in 350 degree oven for 30 minutes. When done, garnish with orange slices.
