  1. Cook the rice according to package directions with 3 Tbs. chopped cilantro and the juice of half a lime.

  2. While the rice cooks, heat the beans in a small saucepan on medium.

  3. Chop the onion and dice the tomatoes. Combine the salsa ingredients in a bowl or pulse in a food processor.

  4. Stir together all the salsa ingredients in a large bowl, adding salt and pepper to taste.

  5. When the rice is done, assemble your Burrito Bowls starting with rice, then topping with lettuce, beans, salsa, and any other ingredients.
