Cook the rice according to package directions with 3 Tbs. chopped cilantro and the juice of half a lime.
While the rice cooks, heat the beans in a small saucepan on medium.
Chop the onion and dice the tomatoes. Combine the salsa ingredients in a bowl or pulse in a food processor.
Stir together all the salsa ingredients in a large bowl, adding salt and pepper to taste.
When the rice is done, assemble your Burrito Bowls starting with rice, then topping with lettuce, beans, salsa, and any other ingredients.
