Dice chicken into small pieces. Dust with cornstarch.
Thinly slice onion, bell pepper, mushrooms and snow peas.
Sauce: add soy sauce, water, sesame oil, brown sugar, hoisin and cornstarch until blended. Set aside.
In a pot of boiling water, cook noodles for 2 minutes. Drain and set aside, adding a tbsp of oil to prevent sticking.
In large skillet add oil and then add chicken and stir fry for 3 minutes, just until crisp. Remove from pan.
Add more oil and sauté onions for 3 minutes. Add garlic, bell peppers, and snow peas and sauté for a couple minutes.
Add back chicken and sauce and stir fry for a couple minutes until noodles are coated. Garnish with chopped green onions and chopped cilantro.
