Stuffed Zucchini With Meat Mixture
Found mistake?
  1. Cut the zucchini in half and scoop out the insides. You want them to be about ¼ inch thick.

  2. Sauté the insides of the zucchini in a pan with a bit of olive oil and a pinch of salt and set aside.

  3. To make the sauce, sauté chopped onions and garlic in olive oil and crushed red pepper flakes.

  4. Add the tomatoes, seasoned with the listed seasonings, the basil, and parmesan rind.

  5. After everything simmered for a while, remove the basil and cheese rind, and purée everything with an immersion blender.

  6. Add in the cooked zucchini insides.

  7. Ladle a few scoops of sauce into a baking dish and place in the zucchini.

  8. Mix the ingredients for the meat mixture together.

  9. Stuff each half with a few scoops of the mixture.

  10. Top everything with more sauce and grated Parmesan cheese.

  11. Bake at 400° for 30 minutes.
