Make a simple blueberry syrup by combining blueberries, water, and sugar in a small saucepan, then cook until the blueberries start to burst and the sugar has dissolved. Strain the syrup and chill.
In a large pitcher, combine lime juice, wine, vodka, and blueberry simple syrup and stir to combine.
Take fresh mint, smack it between your hands to release the flavor, and add it to the sangria.
Add extra blueberries and lime wedges to the pitcher, then let it sit in the fridge for at least 2 hours, up to overnight.
When ready to serve, add extra blueberries, mint, and lime wedges to the glasses, then pour the sangria over crushed ice. Top off with sparkling water and serve immediately.
