Mash ripe bananas until mostly smooth with some texture remaining
Mix all dry ingredients together in a bowl
Cream butter and brown and white sugar together for 2 to 3 minutes to incorporate air
Beat in eggs one at a time
Alternate adding ingredients: add one third of dry ingredients, then half the bananas, mix on low until incorporated
Repeat the alternating process until all flour is incorporated, being careful not to overmix
Grease the baking pan well
Bake at 350°F for about 40 minutes until golden and spongy
