Cheesy Broccoli And Chicken Rice Skillet
Found mistake?
  1. Season chicken with ½ tsp salt and pepper to taste.

  2. Coat skillet with cooking spray.

  3. Over high heat, sear chicken until browned on both sides, about 2 minutes each.

  4. Remove chicken from skillet and set aside.

  5. Lower heat to medium.

  6. Add onion and garlic to the skillet and sauté until they are soft, about 3 minutes.

  7. Add rice to skillet with the veggies and toast the rice for a minute or two.

  8. Add stock, remaining salt, and red pepper flakes to the skillet.

  9. Bring to a boil, cover, and lower to a simmer or low heat. Cook for 8 minutes.

  10. Remove cover and layer broccoli and chicken over the rice.

  11. Cover again and continue to cook for another 7 minutes.

  12. Remove skillet from heat.

  13. Stir in ⅓ cup of cheese into the rice mixture.

  14. Top with remaining ⅓ cup.

  15. Cover skillet again for about 5 minutes, or until cheese melts.
