  1. Step 1: Prepare the Zucchini - Wash the zucchini thoroughly and trim off both ends. Slice the zucchini lengthwise into ¼-inch thick strips, creating long planks. Pat them dry with paper towels to remove excess moisture, which helps achieve better browning.

  2. Step 2: Sauté the Zucchini - Heat olive oil in a large oven-safe skillet over medium-high heat. Add the zucchini slices in a single layer (work in batches if needed). Cook for 3-4 minutes per side until golden brown and tender-crisp. Season with salt and pepper while cooking.

  3. Step 3: Add Aromatics - Reduce heat to medium and add minced garlic to the skillet. Sauté for 30 seconds until fragrant, being careful not to burn it. Sprinkle Italian seasoning over the zucchini.

  4. Step 4: Layer the Toppings - Arrange the sautéed zucchini in an even layer in your oven-safe skillet or transfer to a baking dish. Scatter the diced tomatoes evenly over the zucchini. Combine mozzarella, provolone, and parmesan cheeses, then distribute the cheese mixture generously over the top.

  5. Step 5: Broil to Perfection - Preheat your broiler to high. Place the skillet or baking dish under the broiler, about 6 inches from the heat source. Broil for 3-5 minutes, watching carefully, until the cheese is melted, bubbly, and golden brown in spots.

  6. Step 6: Garnish and Serve - Remove from the oven and immediately sprinkle fresh chopped basil over the top. Add red pepper flakes if desired. Let rest for 2-3 minutes before serving to allow the cheese to set slightly.
