Smoked Street Corn Queso
  1. Heat up cowboy hardwood charcoal

  2. Add beer instead of water to the pan to infuse flavor into the cheese dip

  3. Use Velveeta queso, pepper Jack, cream cheese, and pickled jalapenos

  4. Place the cheese dip over indirect heat

  5. Put the corn right over the heat and stir occasionally

  6. Remove the corn and slice it off the cob

  7. Add a whole can of beer to the cheese dip

  8. Add the corn to green onions, cotija cheese, lime, and chili powder

  9. Mix until nice and smooth
