Cashew Nut Chicken
  1. Marinate sliced chicken with egg white, cornflour, garlic/onion powder, salt, and pepper. Let sit for 15–20 minutes.

  2. Deep fry the chicken in hot oil until golden and crispy. Remove and set aside.

  3. Fry cashew nuts in the same oil until golden. Set aside.

  4. In a hot wok, sauté garlic, green chilies, and Sichuan peppercorns (if using) in 1–2 tbsp oil.

  5. Add cubed capsicum, onion, and cabbage. Stir-fry on high heat for 1 minute.

  6. Pour in the sauce mix and stir well.

  7. Add the fried chicken and cashews. Toss to coat everything evenly.

  8. Stir in the cornflour slurry and cook until the sauce thickens and clings to the ingredients.

  9. Drizzle sesame oil on top and turn off the heat.

  10. Garnish with chopped spring onions and sesame seeds. Serve hot with steamed rice.
