Easy Vegan Thumbprint Cookies
  1. Defrost your raspberries and mash with the remaining jam ingredients.

  2. Set aside for 10-15mins to thicken.

  3. Maybe try roasting the chickpeas for better flavor? Try 425, 30 minutes

  4. In a food processor blitz up remaining ingredients until well combined.

  5. Flatten the chickpea “cookie dough” into thumbprint cookie shapes and dollop a tbsp of jam on to each cookie.

  6. Alternatively, you could add chocolate chips, PB chips, etc.

  7. Bake at 180 degrees Celsius for 20mins.
