Cinnamon Honey Glazed Sweet Potatoes
  1. Preheat your oven to 375 degrees and coat a baking sheet with nonstick cooking spray.

  2. Wash, peel, and dice your sweet potatoes into small, bite sized pieces.

  3. Place the sweet potatoes in a large bowl and mix with honey, cinnamon, nutmeg, coconut oil, salt and pepper until well coated.

  4. Spread your sweet potato mixture out on the baking sheet.

  5. Bake for 25-30 minutes until tender (test with a fork) and the edges have browned.

  6. Once ready, place the sweet potatoes in a serving dish and add an additional drizzle of honey and a sprinkle of cinnamon if desired. Serve hot and enjoy!
