Mix dry ingredients (oats, cocoa powder, and chia seeds) together
Add espresso, almond milk, 2 tbsp maple syrup or honey, and 1 tsp vanilla extract to dry ingredients
Mix well and store in the fridge for 4-8 hours or overnight
Prepare greek yogurt with remaining vanilla extract and maple syrup or honey, adding more if desired for sweetness
Add ½ of the overnight oats to a bowl
Top with ¾ cups of greek yogurt
Sift cocoa powder on top
Serve (recipe makes 2 servings)
