Hash Brown Egg Cups
  1. Preheat oven to 350℉.

  2. Generously grease 12 cup muffin pan.

  3. Line cups of muffin pan with thawed hash browns.

  4. Put eggs, cottage cheese, bacon bits, colby jack cheese, salt, and pepper in a medium size mixing bowl. Mix well to combine.

  5. Equally distribute egg mixture over the hash browns.

  6. Bake for 20 minutes.

  7. Use a toothpick to check for doneness.

  8. Allow to cool in pan for a couple of minutes and then remove promptly from pan. Use a knife to scrap the edges of the egg bites to help remove it smoothly.

  9. Serve and enjoy!
