Preheat oven to 350°F. Line baking sheets with parchment.
In a bowl, whisk together the flour, baking soda, cinnamon, ginger, cloves, nutmeg, and salt.
In a separate bowl, cream together the ½ cup butter, ¼ cup granulated sugar, ½ cup dark brown sugar, molasses, egg, and 1 tsp vanilla extract.
Gradually mix the dry ingredients into the wet until combined.
Scoop dough (1.5 tbsp), roll in sanding sugar, place on baking sheet, and bake for 8 mins. Let cool completely!
Beat together the 8 oz cream cheese, ¼ cup butter, 1 ½ cups powdered sugar, and 1 tsp vanilla bean paste (or extract).
Pipe the cream cheese filling onto the flat side of a cookie and sandwich it with another.
Chill the sandwiches overnight to let the frosting set and prevent oozing.
