Preheat oven to 325°F
Use a knife to score the fat cap
Place a large skillet over high heat and brown the meat fat side down for 3-5 minutes
Remove from pan and season with Hardcore Carnivore Red seasoning
Put the roast on a rack over a pan and cook for about an hour, or until the internal temperature reaches 135°F
Allow the meat to rest for at least 15 minutes before slicing and serving
