Picanha Roast
  1. Preheat oven to 325°F

  2. Use a knife to score the fat cap

  3. Place a large skillet over high heat and brown the meat fat side down for 3-5 minutes

  4. Remove from pan and season with Hardcore Carnivore Red seasoning

  5. Put the roast on a rack over a pan and cook for about an hour, or until the internal temperature reaches 135°F

  6. Allow the meat to rest for at least 15 minutes before slicing and serving
