Creamy Reuben Soup
  1. Cook corned beef low and slow in a crock pot

  2. Make homemade rye croutons by dicing rye bread, tossing in olive oil, and baking at 375°F for about 10 minutes on each side until crispy

  3. Let corned beef rest and cut into quarter inch cubes

  4. Melt 3-4 tbsp butter in a pot on the stove

  5. Add diced onion and minced garlic, cook until onion is translucent

  6. Add ¼ cup flour to create a roux and stir until fully incorporated

  7. Gradually add 4 cups chicken broth, whisking to ensure full incorporation

  8. Bring mixture to a simmer

  9. Add 1 cup heavy cream

  10. Add the cooked corned beef cubes

  11. Add 1 cup sauerkraut (adjust to taste)

  12. Add 8-10 ounces Swiss cheese

  13. Add ¼ cup thousand island dressing

  14. Season to taste with salt, pepper, and dried parsley

  15. Simmer for about 10 minutes

  16. Serve with homemade rye croutons
