Chinese Cold Sesame Noodles
  1. Cook the thin wheat noodles according to package directions. Fresh noodles usually only require 1-2 minutes, and dried noodles will usually require 5-7 minutes depending on their thickness.

  2. Prepare an ice bath for the noodles and set aside.

  3. While the noodles are cooking, prepare the sauce.

  4. Mix all the sauce ingredients together, except for the hot water.

  5. Gradually add the hot water 1 tbsp at a time until the sauce reaches a slightly runny consistency. Taste the sauce and adjust to your preference.

  6. Slice the cucumbers and scallions (if using).

  7. Once the noodles are done boiling, drain them, then drop them into the ice bath for 1-2 minutes.

  8. Drain well, then top the noodles with your sauce and garnishes. Enjoy!
