Preheat oven to 350°F.
In a bowl, whisk flour, cinnamon, and salt.
Add maple syrup, water, and coconut oil.
Mix until a dough forms (it'll be a bit firm!).
Roll dough out on parchment paper.
Slice into rectangles or squares.
Use a fork to poke holes in each piece (so they don't puff up!).
Transfer parchment to a baking sheet.
Bake 13–15 mins until golden and crisp.
Let cool fully before breaking apart.
Store in an airtight container: → up to 2 weeks in the pantry → up to 3 months in the freezer
