Cut even parchment sheets.
Place a round of the beef mixture between 2 sheets and roll it out. It doesn’t need to be perfect.
Remove the top sheet and roll it up about 1 inch folds.
Place it onto a baking tray along with some peppers + tomatoes.
Bake on 400 for 20 minutes.
After 20 minutes remove from parchment paper, separate tomatoes and peppers and place the meat back in on broil for 3-5 minutes if you want it to be more crisp.
For the wrap, spread one tomato as the base.
Top it with the meat.
Add the peppers.
Top with sumac onions (salt, sumac, Aleppo pepper, lemon juice, and cilantro).
Add a sauce (tahini, yogurt, lemon, salt and water).
Enjoy.
