Toast the walnuts in a dry skillet for 2 minutes and remove from heat
Put the spinach, basil, walnuts and garlic in a food processor and pulse to combine
With the machine running, slowly pour in the olive oil and blend until ingredients are well incorporated
Add the cheese and pulse to combine
Season with salt and pepper to taste
Sauté the mushrooms
Cook the tortellini according to package directions
Combine the pesto with cooked tortellini, sautéed mushrooms, asparagus, peas, and chicken if desired
