Sauté garlic and onion in olive oil until translucent
Add beans, oregano, salt and pepper and stir until heated through
Add tinned tomatoes and vegetable stock, stir until combined and bring to a light simmer for approximately 5 minutes
Add chopped kale and stir until softened, simmer for a further 5 minutes
Add parmesan cheese and simmer until reduced
Optional: Add a sprinkle of feta and fresh herbs upon serving
