Preheat oven to 200°C (400°F).
Toss diced potatoes with olive oil, paprika, garlic powder, salt, and pepper.
Spread on a baking tray and roast for 30–35 minutes until crispy and golden.
Transfer potatoes to a baking dish and dot with butter.
Sprinkle bacon and cheese evenly over the top.
Return to oven for 10 minutes until cheese is melted.
Top with sour cream and green onions before serving.
