Mix the chicken sausage meat with the diced tomato, spinach, and chopped spring onion in a bowl. Season with a little salt and pepper.
Carefully cut the wholemeal pita bread in half to create pockets. If you struggle to open the pita bread microwave for 10-20 sec to soften it. Then insert a butter knife or use scissors and run it along the pocket to loosen it. Stuff each pita pocket with the sausage mixture, making sure to evenly distribute the filling.
Preheat a grill or a griddle pan over a medium heat. Place the stuffed pitas on the grill and cook for about 4 minutes on each side until the sausage meat is fully cooked and the pita is golden brown. If the sausage meat needs further cooking, transfer the grilled pitas to a preheated oven at 180°C or an air fryer, and cook for an additional 5 minutes.
While the pitas are cooking, mash the avocado in a small bowl. Add the lemon juice, honey, a pinch of salt, pepper, and chilli flakes. Remove the pitas from the oven or air fryer and let them cool slightly. You can enjoy it right away or prep to warm up later.
