Preheat oven to 375°F. Grease one sheet pan and line the other with parchment paper
On one baking sheet (parchment), lay out 12 strips of bacon and bake for 15 minute
1n a large bowl, whisk eggs and milk together until smooth. Season with salt and pepper and pour into prepared sheet pan. Bake until cooked through, about 12 minutes. You want eggs to be set but not overcooked, so some liquid is okay. (you can bake bacon and eggs at same time)
Once done, slice eggs into 12 even squares. Cut each slice of bacon in half.
Halve and top each muffin with egg, bacon, and a slice of cheese
If freezing, wrap each sandwhich in wax paper, fit into a freezer bag, and freeze . To reheat, remove from paper and microwave 1-2 minutes.
