Combine 1 ⅓ cup warm water (between 105-110 degrees F), 1 tbsp sugar, and 2 tsp active dry yeast
Add 2 tbsp olive oil, 3 ½ - 4 cups all purpose flour, and 2 tsp salt to the mixture
Mix until dough forms, adding additional ½ cup flour if needed
Let rise in a well-oiled bowl for about 1 hour, until doubled in size.
Punch down, cut into ¼ pieces, then fold corners up on themselves. Shape dough into bowls
Let rise for about 30 minutes.
Brush with egg wash made from 1 egg and 1 tsp water
Bake at 425°F for 20-25 minutes until golden brown
