Burnt Miso Pound Cake
  1. Preheat your oven to 350° F (175° C).

  2. In a medium-sized bowl, whisk together the shiro miso, buttermilk, grapeseed oil, and melted butter until well combined.

  3. Add the eggs and whisk until fully incorporated.

  4. In a separate large bowl, combine the sugar, cake flour, light brown sugar, baking powder, and salt.

  5. Slowly pour the wet ingredients into the dry ingredients, and mix until just combined.

  6. Pour the batter into a prepared loaf pan or bundt pan.

  7. Bake for approximately 60 minutes for a bundt pan or 20-25 minutes for a 9-inch cake, or until a knife comes out clean when inserted into the cake.

  8. While the cake is baking, prepare the apple compote by combining diced apples, sugar, pectin, ground cinnamon, and salt in a saucepan. Cook until the apples are tender and the mixture thickens.

  9. For the sour whipped cream, whip together heavy cream, sour cream, confectioners’ sugar, and vanilla extract until stiff peaks form.

  10. Once the cake is baked and cooled, serve slices topped with the apple compote and a dollop of sour whipped cream.
