Preheat your oven to 375°F.
Roll out the pie crust and press it into a 9-inch pie springform pan or pie dish.
Add the crescent roll around the top of the pie crust layer to make the crust, gently pressing to form a seamless layer.
In a bowl, whisk the eggs with thyme, heavy cream, salt and pepper.
Pour the whisked eggs into the crust.
Sprinkle the cooked bacon, the vegetables, and shredded cheese evenly over the eggs.
Shred some Parmesan to top.
Brush the egg wash on the top of the crescent rolls and sprinkle with everything bagel seasoning.
Place in the oven and bake for 40 minutes, or until the eggs are set and the crust is golden brown.
