Combine the egg, protein powder, brown sugar, milk, oil & vanilla in a bowl and whisk until it is smooth. You may want to combine the protein powder & milk together in a shaker cup first, to ensure no lumps.
In a different bowl, sift the flour, cocoa powder, baking soda & salt together.
Dump dry ingredients into wet & fold together. Do not overmix.
Let batter rest for 5 minutes for best results.
Keep the stove top on low-medium heat and use butter or vegetable oil to grease the pan before every pancake.
Use about ¼ cup of batter for each pancake, do not touch until batter is beginning to bubble up in the middle. Flip & let cook for another 2-3 minutes. Transfer to a plate & serve immediately.
