Keto Coconut Macaroons
  1. Preheat the oven to 325F and line a baking sheet with parchment paper.

  2. In a large mixing bowl, whisk the egg whites until frothy. Whisk in the sweetener and salt. Stir in the shredded coconut.

  3. Using a 2 Tablespoons scoop, scoop out your batter onto your baking sheet. Should make about 15 macaroons. Place into already preheated oven and bake for 15-20 minutes. Let cool completely to set.

  4. In a small glass bowl, combine the chocolate chips with 1 teaspoon coconut oil. Microwave in 30 second increments, stirring in-between, until the chips are melted. Drizzle the melted chocolate on the macaroons.
