Combine all seasoned ground pork ingredients in a bowl and mix until well combined.
Combine all sticky glaze ingredients in a saucepan, bring to a boil then simmer 3-4 minutes until slightly thickened.
Divide the pork into 8 equally-sized balls and place on top of each corn tortilla, then smash over the entire surface.
Add olive oil to a large skillet.
Cook pork-side down for 2 minutes, then flip to cook 1 minute until the tortilla has crisped up along the edges. Brush the pork in the glaze, then flip to cook 30 seconds. If needed, cook the tortilla another 1 minute. Repeat with remaining tortillas.
Brush any leftover glaze on the tortillas and garnish with chopped cilantro, scallions, and pickled onions. Serve warm.
