Velveting Meat ex:Pork

    This recipe is large for restaurant preparation. Scale it down for home use.

  1. Start by cleaning your hands and preparing the pork. Cut into thin ¼” strips.

  2. Season the pork with white pepper msg and salt.

  3. Add 2 teaspoons of baking soda in about 24 ounces of water. Pour over the pork and mix everything thoroughly.

  4. Incorporate 2 eggs into the mixture and continue to mix well.

  5. Gradually add cornstarch to create a slurry and mix until combined.

  6. Beat or massage the meat mixture until it achieves a smooth and glossy texture.

  7. Finally, add neutral oil to the mixture to prevent sticking. Your meat is now velveted and ready for cooking.

Too much baking soda can make it taste soapy. Surface area is key. If you have thicker meat, which has less surface area per LB, you can only use like 1 tsp per lb. If you have thin sliced meat with a lot of surface area you can use more than that without an off taste, and it needs a decent amount to work right. 2 tsp for 1 lb is good when it's thin.
