Wash the orca beans in a big soup pot and cover with water.
Add a piece of Atlantic Iceland Kelp and bring to a rolling boil.
Remove from heat and let sit for an hour.
Remove the kelp, rinse the beans, add fresh water, replace the kelp, and bring to a boil again.
Simmer, stirring often, until beans are soft but not falling apart.
Chop the onion, garlic, carrots, celery, and any other desired veggies.
Cook onions and garlic in a separate pot with high-heat oil and extra virgin olive oil until transparent.
Add spices & tomato. Cook down.
Add the thyme and cook for a few minutes before adding all the beans and bean stock, chix stock
Cook 30 - 40 min
Fix seasoning, additional water if necessary, sea salt, apple cider vinegar, and simmer to combine flavors.)
Add corn and greens
Top with fresh herbs, green onions, or chopped tomatoes, and season with chili pepper or black pepper.
