Peel apples & cut into bite size pieces. Add to a pan. Squeeze lemon juice and add brown sugar, cinnamon, nutmeg, vanilla extract, & wine. Cover & simmer for 10 min. Mix cornstarch with equal parts water & add to apple pie mixture. Cover & simmer for another 10 min.
Preheat oven to 400. Add butter to a 9x9 baking pan & place in oven until butter melts & browns. Set aside.
For the dough, add dry ingredients to a large bowl & whisk. Add wet ingredients & mix to combine. Don't over-mix your dough. Add apple pie filling, reserving some for the top. Gently fold in. Add dough to prepared baking dish. Spread dough out evenly & add remaining apples to the top. Press firmly into dough, cut into 9 squares, & bake for 30 min.
Warm caramel in the microwave until it's warm to your liking. Spread evenly over your biscuits. Dust with powdered sugar.
