  1. Heat oil in a large non-stick skillet over medium heat. Add diced bell peppers, onions and garlic to the pan and cook until starting to soften, about 3-4 minutes.

  2. Move pepper and onion mixture to the side of the pan and add ground turkey and taco seasoning.

  3. Start breaking ground turkey apart with spatula, mixing with the vegetables.. Cook continue cooking on medium heat and stirring regularly for about 7-10 minutes until ground turkey is fully cooked through.

  4. Heat corn tortillas either by microwaving with damp paper towels in between the tortillas for 30-45 seconds, or heating in a small skillet on medium heat for 20-30 seconds on each side.

  5. Fill tortillas with the taco meat and veggies, then add your favorite taco toppings. Enjoy!
