(ask your butcher to grind it twice for a smooth, kebab style texture)
Place the ground meat into a bowl
Grind all remaining ingredients in a food processor or with a blender on a stick
Add the ground herb mix to the meat and mix very well by hand. It should be quite tacky.
Place the meat between two large sheets of baking paper and roll flat and very thin as per video
Roll up the neat in the two shapes of baking paper and place on an oven tray
Repeat until all the meat mix is used and the oven tray is full of paper meat rolls.
Bake 200C for 25 mins or until cooked and somewhat browned in places
Unroll and tear into pieces the size of kebab meat that is sliced off a large drum in the shops.
Use to assemble kebab rolls with sauce, salad, and pickles, as desired.
