Preheat air fryer to 340°F.
Add eggs, cheddar cheese, cottage cheese, milk, salt, and pepper to a blender. Blend ingredients together for 30 seconds.
Place the molds in your air fryer and divide the egg mixture across your molds. Evenly disperse your veggies amongst the molds (~1 tbsp per egg). Sprinkle cheese on top of each egg muffin.
Cook in the air fryer for 5 minutes, stir, and cook another 8 minutes. Cook just until eggs are set (they will continue cooking a little bit once removed. Rest 5 minute before removing from molds.
Serve immediately or store in the fridge/freezer for later. Can stay in the fridge for up to 5 days and in the freezer for 3 months.
