Boil the potatoes for 20-25 mins until soft. Mash with butter and allow to cool.
Add flour, baking powder and salt to make a dough.
Roll the dough on a floured surface, cut into squares.
Fry on a dry pan for 4-5 mins on each side. If serving as part of a fry-up, fry in oil for an additional 1-2 mins on each side. Enjoy!
