In a large bowl combine the pork, ginger, garlic, green onions, soy sauce, sesame oil, Celtic salt, and pepper. Mix well with your hands then divide into 4 portions.
Place one portion of the pork mixture into a tortilla and press evenly from edge to edge. Repeat for the remaining 3 tortillas.
Heat a frying pan over medium heat and add some avocado oil to the pan. Place the tortilla, meat side down on the pan and cook for 3-4 minutes. Flip then cook for another minute til nice and crispy.
While the tacos are cooking, whip up the sauce in a medium sized bowl and set aside.
Once the tacos are done. Garnish with cucumbers, cabbage, carrots, cilantro and chives then drizzle or dip into that sauce and enjoy!
