Chicken
Preheat oven to 450°F.
Wash and cut potatoes into 2 inch cubes. Add olive oil, salt, pepper, garlic powder, paprika and chili powder. Mix well, then place on a baking tray and bake for 35 minutes.
Meanwhile, cut chicken breast into cubes. Add olive oil, salt, black pepper, paprika, chili powder and garlic powder. Mix well.
In a hot pan, add chicken cubes and cook for 6 minutes. Then, add onions and corn. Cover and cook for 2 more minutes until chicken is cooked all the way through and veggies are soft.
Add potatoes and black beans to the pan. Mix well, then top it off with tomatoes, sour cream, and hot sauce.
