Preheat oven to 220c with muffin tin in the oven.
In the meantime, whisk flour, eggs, milk and melted butter (you can also use a blender)
Take hot muffin tin out and grease with butter
Fill each muffin cup about ¾ with the batter (I got 8 out of this batter)
Bake at 220c for 15 minutes, then reduce to 175°C and bake for another 15–20 minutes until puffed and golden.
Don't open the oven during baking or they'll collapse!
Let cool slightly and dip in your cinnamon sugar mixture. Enjoy whilst still warm and crispy
