Hummingbird Muffins With Cream Cheese Center
  1. Preheat oven to 350°F (175°C)

  2. Line a muffin tin with paper liners

  3. In a bowl, whisk together flour, baking soda, salt, and cinnamon. Set aside

  4. In a large bowl, whisk sugars and eggs until smooth

  5. Add buttermilk, vanilla, and oil; mix until combined

  6. Stir in mashed banana, drained pineapple, pecans and coconut

  7. Fold dry ingredients into wet until just combined

  8. Beat cream cheese until smooth

  9. Add egg yolks, sugar, flour, vanilla, and salt to cream cheese. Mix until creamy

  10. Fill each muffin liner about halfway with batter

  11. Add cream cheese filling to the center of each muffin

  12. Sprinkle extra coconut and pecans on top

  13. Bake for 25–35 minutes, until tops are golden and a toothpick inserted into the muffin comes out clean
