Cabbage & Beetroot Salad With Citrus Vinaigrette
  1. In a wide salad bowl, combine sliced purple cabbage, spring onions, beetroot sticks, shaved carrots, apple sticks, and chopped parsley

  2. In a separate bowl or sealed jar, whisk together olive oil, honey, salt, lemon juice, orange juice, lemon zest, orange zest, and red pepper or cayenne pepper

  3. Pour the vinaigrette over the salad and mix well using two large spoons or your hands

  4. Massage the cabbage and beets gently to infuse their colors and flavors together

  5. Sprinkle chopped pistachios over the top

  6. Serve and enjoy. The salad tastes great the day after as well
