Get a pot of salted water boiling for your pasta. Once boiling, add pasta and cook al dente as specified on the box. Once it's done, strain the pasta but reserve a cup of pasta water for later.
Meanwhile, add sausage to a large sauce pan or braiser heated over medium-high heat. Use a spatula or meat masher to break the sausage up into tiny crumbles.
Once the sausage is cooked through, add the Boursin Cheese and the jar of tomato sauce. Turn the heat down to medium and stir the sauce mixture until combined.
Once the cheese has melted into the sauce, add in the al dente pasta and stir to combine. Once all the pasta is coated in the sauce, add half a cup of the reserved pasta water and toss once more to loosen it up.
Taste and season with salt and pepper if needed before serving. Optional, but you can also serve with parmesan and a drizzle of good olive oil if you wish.
