Slow Cooker Coconut Curry Lentils
  1. Rinse the lentils: Give them a good rinse and add to your slow cooker.

  2. Add liquids: Pour in the coconut milk and vegetable broth.

  3. Add seasoning: Stir in the curry powder.

  4. Cook: Cover and cook on low for 6-8 hours or high for 3-4 hours, until lentils are tender.

  5. Finish with spinach: Stir in the fresh spinach during the last few minutes until it wilts.

  6. Serve: Enjoy with rice or naan. Or both!!
