Rinse the lentils: Give them a good rinse and add to your slow cooker.
Add liquids: Pour in the coconut milk and vegetable broth.
Add seasoning: Stir in the curry powder.
Cook: Cover and cook on low for 6-8 hours or high for 3-4 hours, until lentils are tender.
Finish with spinach: Stir in the fresh spinach during the last few minutes until it wilts.
Serve: Enjoy with rice or naan. Or both!!
