In a mixing bowl combine the flour, cornstarch, sugar, salt, paprika, onion powder, baking soda, baking powder and pepper.
Stir to combine well.
Add both cans of club soda into the dry mixture and whisk well.
The batter will foam as you pour the club soda in.
In a deep pan, heat the oil for frying to 360 degrees.
Using tongs, dip each Chicken tender into the batter and then carefully place it in the oil.
Fry on each side for 2 to 3 minutes, then flip.
The batter will become golden brown.
The chicken tender will float to the top when it is done.
Remove the chicken and place on a wire rack to drain.
Serve with a dip or eat these plain.
