Prepare sofrito by pulsing all the veggies in a blender or food processor until finely chopped, but not liquified.
Add oil and ground turkey to a pan over medium heat. Season with sazon, adobo, black pepper and sofrito. Cook until brown.
Cut pie crusts into 6" rounds. Stuff with just under ¼ cup of filling. Brush half crust with egg wash, crimp and fold. Brush the tops of the empanadas with egg wash.
Put in air fryer at 360 for 12 minutes.
