Easy Puerto Rican Empanadas
  1. Prepare sofrito by pulsing all the veggies in a blender or food processor until finely chopped, but not liquified.

  2. Add oil and ground turkey to a pan over medium heat. Season with sazon, adobo, black pepper and sofrito. Cook until brown.

  3. Cut pie crusts into 6" rounds. Stuff with just under ¼ cup of filling. Brush half crust with egg wash, crimp and fold. Brush the tops of the empanadas with egg wash.

  4. Put in air fryer at 360 for 12 minutes.
