Pastrami-spice Rubbed Tofu
  1. Mix the pastrami spice rub together and in a bowl or Tupperware and then drop medium-thick cut slices of tofu in one at a time.

  2. Make sure each slice is properly covered in the spices, adding more to the spice mix if you have to between slices.

  3. Bake at 170c for 20 mins / airfry at 170c for 15 mins until it's crispy on the outside but still feels soft and juicy inside.

  4. Serve in hot or cold sandwiches! We used to serve with coleslaw, Russian dressing, cheese and sweet pickle slices on sourdough.
