Sweat onions in oil until soft with a pinch of salt, 5-7 mins.
Add garlic, spices, and another pinch of salt, stirring to coat the onions and toast until fragrant.
Add beef, using your spatula to break apart into small pieces as it cooks.
When mostly brown, add tomato paste, vinegar, and chicken stock, stirring until evenly incorporated.
Simmer for 5-7 mins until beef is coated in a thick sauce.
Taste and season with additional salt as needed.
