Anya Fernald’s Beef Jerky Recipe
  1. Slice the meat very thin, about 12 cups worth.

  2. Mix the sliced meat with 3 cups of soy sauce, 1 cup of rice wine vinegar, ½ - 1 cup of sugar, and 1 cup of diced scallions and grated ginger.

  3. Marinate the beef jerky in refrigerator for 12 to 24 hours.

  4. Place on dehydrator trays and sprinkle the slices with toasted sesame seeds and chili flakes.

  5. Dehydrate the marinated beef jerky overnight at 150°F for 16 - 24 hrs (or according to your dehydrator’s instructions. Lasts up to a year.
